Here's the honest answer: Thailand in November works well for most of the country, just not yet for every island. The cool, dry season is opening across the mainland and the Andaman coast. Koh Samui, Koh Phangan and Koh Tao are still finishing their own wet season on the other coast.

Is November actually the best month?
By the weather data, yes, mostly. November rates "best" for the north, the central plains and the Andaman coast alike. Daytime temperatures ease to around 30°C as the last rainy season showers clear out. It's a shoulder season in the original sense: everything is lush from months of rain, the sky is clearing, and prices haven't caught up to the December peak yet.
There's one exception. The Gulf coast, home to Koh Samui, Koh Phangan and Koh Tao, runs on the opposite monsoon pattern to the Andaman side. It stays wet into November while the west coast dries out. Building your whole trip around those three islands? December onwards is the safer bet.
Where to go (and where to wait) in November
Split your route by coast and November gets easy to plan.
Andaman coast (Phuket, Krabi, Koh Phi Phi, Koh Lanta, Koh Lipe): go. This coast runs dry roughly from November through April, so November sits right at the start of its best stretch of the year. Expect clear water and calm crossings between islands. Manta ray and whale shark season further out doesn't properly start until February.
North (Chiang Mai, Pai, Chiang Rai): also a good call. Mornings still carry a hint of the rainy season's leftover haze, but days are dry and comfortable for temples and trekking. The properly cold nights northern travellers talk about don't arrive until December.
Gulf islands (Koh Samui, Koh Phangan, Koh Tao): wait. This coast is still catching up to its own dry season through November. If one of these three islands is the whole reason for your trip, shift your dates to December or later.
If the choice of island is still open, Koh Samui vs Phuket sets the two coasts against each other on exactly this point. Travellers planning with Stippl already lean this way without being told: trips that include Koh Samui are noticeably less likely to start in October or November than the average Thailand trip, and noticeably more likely to start in the European summer instead, exactly the window this coast is still catching up on.

Wat Thailand in November kost
Price is the other reason November works. Along with the tail end of October, it's one of Thailand's two cheapest windows of the year (the other runs May to September). The rain has cleared, but the December to March crowds haven't landed yet. Once Christmas and New Year hit, island rooms can sell out months ahead and sometimes double in price. Book that same room in November and you'll pay a normal rate.
On the ground: a backpacker budget runs €20-30 a day (dorm bed, street food, buses and ferries), mid-range €55-90 a day (private pool-hotel room, restaurant meals, the odd domestic flight). A street food plate costs 40-60 THB (€1-2), a decent double room €20-45. One practical note: Thai ATMs now charge 250-350 THB (about €7-9) per withdrawal, so pull out more in one go rather than making several trips to the machine.

It's biggest in Chiang Mai, where it overlaps with the northern Yi Peng lantern release: thousands of paper lanterns lifting into the night sky at once. Expect transport and hotel prices in Chiang Mai to tighten around the festival dates, so book that leg of the trip earlier than the rest.
Outside the north, Bangkok, Ayutthaya and pretty much every riverside town hold their own smaller version, so you don't have to be in Chiang Mai to see it, just closer to the water than usual.
