NOTES
1. Plan your evenings around sunset wherein one of the sunsets is reserved for MetropolParasol (also referred to as Las Setas).
The second sunset time should be reserved for the promenade walk along the Guadalquivir river
2. The nightlife hub is a street called Alameda de Hercules
3. Book your tickets for Las Setas, Royal, Alcázar, and Sevilla Cathedral in advance. For Las Setas, especially if you’re booking for sunset, do it the night before.
4. DO NOT MISS FLAMENCO PERFORMANCE - Tablao for formal, Plaza Espana for afternoon casual or La Carboneria for bar.

Vegetarian Food
1. Bastones de Berenjenas con Miel: Fried aubergine with a drizzle of sugarcane syrup. I tried this at Bar Carmela in Barrio Santa Cruz and it was fantastic.
2. Spicy Patatas Bravas: Spiced potatoes. I tried this at Bar Carmela in Barrio Santa Cruz and it was very good (not the best I had on the trip – the best I had was at La Bodega in Ronda).
3. Mushroom Croquetas: Mushroom croquettes. I ate these at La Chunga – a lively tapas bar within proximity to Puente de Isabell II.
Espinaca Con Garbanzo: Spinach with chickpeas. This is a lightly spiced spinach gravy with chickpeas. El Libero Tapas Bar in Barrio Santa Cruz does this well.
4. Spanish Tortilla: A potato omelette. This is a great vegetarian option and is available almost everywhere.
5. Vegetarian Paella: Known as one of the best and most well-known dishes of Spanish cuisine, this dish is NOT Andalusian. It is from Valencia. But if Valencia is not part of your trip, definitely try this at El Libero Tapas Bar in Barrio Santa Cruz.
